Cape Jazz Shiraz
Slightly sweet, this petillant (lightly sparkling) wine is the Cape’s improvised fusion of Italy’s Lambrusco with Australia’s sparkling shiraz. We use early-harvested Shiraz grapes because we want fresh acidity and low alcohol (this one only has 9.5%). Fermentation is slow, with a touch of wood, and the bubbles amplify the wine’s berry flavours. Served chilled.
